Salad is a very nutritious and light choice for a meal, however the dressing often ruins it, by covering the fresh vegetables, legumes, fruit, nuts and seeds with high unnecessary amounts of sugar, salt, saturated fats and additives.
The dressing doesn't need to be the villain. There are several easy and nutritious dressing recipes.
Best Dressings for Vegetable Salads and some Cold Pasta Salads

Classic Vinaigrette dressing - Whisk 5 tbsp of olive oil, 2,5 tbsp of fresh lemon juice or apple cider vinegar, dash of salt and pepper. Rectify to taste. Ready!

Tzatziki sauce - Blend 1 peeled cucumber, 2 garlic cloves, 1 tbsp olive oil, juice of half a lemon, 1 tsp dried mint, dash of salt and black pepper. Add 1 greek yogurt or vegan yogurt. Rectifie to taste. Refrigerate. Ready!

Basil Pesto dressing - Blend 3 cups of fresh basil, 2 or 3 garlic cloves, 8 tbsp olive oil, 4 tbsp golden roasted pine nuts or other nut, 1 tbsp of fresh lemon juice (optional), 4 tbsp of parmesan (optional), dash of salt and black pepper. Rectify to taste. Refrigerate. Ready!



Miso Salad Dressing - Blend 4 tbsp of miso, 2 tbsp of rice vinegar, 2 tbsp of soy sauce, 2 tbsp of sesame oil, half a tsp of ginger, water as needed. Rectify to taste. Ready!

Tahini Dressing - Blend 5 tbsp of tahini (sesame paste), 5 tbsp of water, 4 tbsp of fresh lemon juice, 2 garlic cloves, dash of salt. Rectify to taste. Ready!
There are several variations of these dressings. Herbs can always be added, like parsley, basil, others. Or garlic and onion!
The quantities should be adjusted to our personal taste.
